Dulce Caramel Pudding

 I never made caramel pudding at home,since I have had this dessert almost every other day from child hood.This is the only dessert sometimes people make it frequently for all occasions with more eggy flavor..My mom makes this and feed me when i was fussy in eating..So,there were times,i had it as a meal ;-)

I tried it with Dulce de leche(reduced condensed milk),it came out perfect with more caramel flavor...

Dulce de leche-1 tin
(reduced condensed milk)
Sugar-1/4 cup to caramalize


1.To make Dulce de leche,Open the tin slightly to half tin and keep in a vessel..Use a double boiling method in pressure cooker on stove or in oven,Place the tin with vessel and cook it for 2-3 hours,
until it is caramelized

2.Beat the eggs with spoon,dont make it frothy.Filter if it has any froth or bubbles

3.Beat the dulce and the milk in beater and set aside

4.Melt the sugar in a pan in low flame,once it turns light brown in color ,pour it around the bottom of the pudding mould

5.Mix the milk and eggs and Pour it over the caramel

6.Cover the pan with the aluminium foil and cook it in a double boiler with lid closed for 20 to 25 minutes
7.Insert a knife or tooth pick ,if it comes out clean,its done
8.Bring it to room temperature and unmold the pudding in deep hallow plate/serving dish,so the sauce will be saved.
9.Refrigerate the pudding for atleast 2 hours for heavenly delicious caramel pudding

  • To set the double boiler,Pour water in the pan,place the pudding bowl in center and cover the entire pan with the lid..The water should be 3/4 th level of the pudding pan...To make it simple and easy,use a pressure cooker like i did.
  • I didnt use vanilla essence ,the pudding wasnt eggy and caramel flavor was on top notch in every bite of the pudding.

Eggless Crepe with Dulce and Apple

A easy and quick fix snack or meal for kids...

Eggless Crepes with Dulce and apple-makes 5 crepes
All purpose flour-1/4 cup
Cornflour-1/4 cup
Milk-3/4 cup
A pinch of salt
1 tsp butter

For Filling 
Apple ,de-skinned and sliced
Butter-1 tsp
Dulce de leche-2 tbsps

1.Combine all purpose flour,corn flour,milk and salt and 1/4 cup of water in a deep bowl.Mill well till no lumps remain,and keep aside
2.Heat non stick pan with butter ,greased and pour 3 tbsp of batter into it,Spread the batter ,make thin spread in medium flame
3.Allow it to cook to get brown spots,flip the crepes and cook for 10 seconds
4.Saute apple slices in butter and stuff in the crepe with dulce de leche and serve

Dust some cinnamon sugar on apple 
Include dulce or nutella in stuffing

Pizza Republic -Review

Recently Mr.Ramki, food blogger opened his new venture "Pizza republic" in taramani,chennai...A lot of foodies visited the place and shared their wonderful experiences in CFG..After series of not-so good dining experiences ,I wanted to try pizza republic for CFG showcase yesterday..After a hectic day ,the night turned out the best hangout in pizza republic..We traveled all the way to PR in mogapair and ordered a margarita before the showcase.We went and sat on upstairs where they served a hot and fresh pizza loaded with cheese and some extras..(onion,tomato and olives are free toppings!!)  

As soon as you enter,you will be given a form to enter your choice of pizza...Place the order,pay the bill and after ten  minutes,a box of fresh pizza delivered to you.You can either do take away or have it there...The concept is so simple ,but the pizzas are the best and affordable...

Mr.Ramki made some interesting topping pizzas Xculsively for CFGians.. The pickle and mint chutney pizzas were fabuluous,We recommended it to include in the menu..

I like the thin crust pizzas and this was surprise to me,the mint chutney flavour was bursting out and i loved the new style of using mint chutney and the crust was so good to hold the flavors...The pickle pizza is not from the menu,the taste reminds me of having paratha with pickle...

The pizza pockets was so soft and delicious...of course it is an innovative creation by Ramkiji

We ordered almost ten different pizzas ,all of them was over soon as we were around 15 people...Then came cheese contest of who will get longest thread of cheese....The extra cheese pizza was loaded with two layers of cheese in between the base sauce

I loved the base sauce which was little spicy ,the ingredients were so fresh and what else you need in a pizza..Of course ,"the cheese" it just melts in your mouth..Pizza republic is planning to open lot of outlets around chennai...Check their facebook page and dont miss to enjoy the freshest pizza from PR!!
