Pineapple Rasam


Pineapple Rasam
Ingredients
Cooked Toor dal-half cup
Pineapple Juice-2 cups or
Pineapple ,Chopped-1
Cumin-1 tsp
Tomato-1
Mustard seeds-1 tsp
Turmeric powder-half tsp
Green Chilli ,chopped-1-2 nos
Coriander,chopped-1 stem
Pineapple ,chopped-Few pieces
Oil-1 tsp
Salt to taste
Lime juice-2-3 drops

Method
1.Chop pineapple using pineapple cutter,remove the thorns and the center pulp(white) and
 grain it to fine paste
2.In tawa,add oil-1 tsp,mustard seeds,cumin,green chillies  and tomato
3.Add the toor dal ,pineapple juice and 1 cup of water
4.Add the rest of the ingredients one by one and bring it to a boil
5.Switch off the flame and add the lime juice.

Indian Flavoured Pizza

I made this instant(south) indian  flavoured pizza with curry leaves

Fry the chopped onion and tomatoes in oil with salt ,turmeric and pepper powder


Spread them on pizza base
Sprinkle some fried curry leaves and grated soft Cheese
Microwave it at high for one minute

It takes just 2 minutes to make this indian pizza...Even just born will like it..
I mean is there any kid hates pizza..

Milkyway Pongal/Kalkandu pongal


  
Ingredients
Rice-1 cup
Full cream Milk-1 litre
Kalkandu-Crystallized Sugar-1 cup
Ghee-half  cup
Condensed milk-3 tbsp
Cloves-3
Javithri powder-half tsp
Cardamom powder-1 tsp
Pacha karpuram-a pinch

To Garnish
Cashew and Raisins

Method
1.Wash the rice and add with the milk to pressure cooker
2.Once it starts boiling,close the lid,reduce the flame to sim ,cook it 40 minutes without keeping the whistle
3.After 40 minutes,switch off the flame,rest for 5 minutes
4.Open the lid,smash the rice nicely with ladle before the stem escapes...
5.Crush the Kalkandu sugar in mixie ,add to it
6.Sprinkle the Cardamom ,javithri and pacha karpuram powder and add condensed milk to it
7.Fry cashews,cloves and raisin in ghee and add to rice..

Yummy Milkyway pongal is ready

  • If u r afraid to cook the rice in milk,u can add half litre to the rice and add the rest later
  • U can substitute the milk with water to avoid high calories
  • The proportion of milk ,sugar and rice is 6: 1:1(So,measure with same cup for all ingredients)
  • U can also make this with milk powder in cooked rice...jus add amt of milk powder needed for one litre of milk(I think 1 tsp=30 oz,so some 30 tsps goes)

Nan khatai



This recipe is quit popular...It is very easy to remember the recipe...as easy as making gulab jamuns..
Maida,Butter and Sugar (MBS)
at the ratio of 2:1:1

I mean
Maida or APF-1 cup
Unsalted Butter-half cup(So,one stick)
Sugar-half cup
Baking powder-1 tsp(optional)
Milk-1 tsp(optional)

Method
1.Melt butter into liquid form (jus 60 secs in microwave)
2.Add sugar to melted butter,mix well until sugar is well dissolved 
3.Add the flour and make a tight dough
(dont knead the dough too hard,jus knead with tip of ur fingers)
4.Make like (table tennis)balls and press them in center
5.Grease a tray,dust some flour,keep the dumplings an inch distance to each other
6.Bake at 350 for 15-20 minutes in a preheated oven(big oven) and 240 for 10-15
 minutes in small preheated oven

For the first time cookie makers
  • Check the center of cookie is cooked..it shdn't be like dough u made,some granules has formed,but still soft
  • The temperature varies to each oven,so keep an eye while baking
  • Wait till the cookies cools down,it turns crispy..u wont get crispy cookies straight from the oven
  • Can decorate with choco chips,candies and nuts
  • Can also add flavour with any essence or cardamom powder 
  • I usually dont use baking powder for nan khatais,but u can try it
  • Make soft dough,so ur cookies wont have much cracks

U can also roll the dough and make shapes out of it ...dust some flour while rolling it.
