Kozhukattai/Modak


Hi ,Wish u all Happy ganesh chathurthi..hope u all enjoyed and be bless..i am sharing modak little early...cos i made pooja day before chathurthi..since my hubby leaving out of station..
I made lots of varieties...He and my daughter gulped entire kozhukattais...i saved a few to show u....
Ingredients
For White dough
Rice flour-1 cup
Water-1 and half cup
Salt-1/2 tsp
Oil-1 tsp
Milk-1 tsp

Method
1.Boil Water,Salt,Milk and Oil
2.Add flour and mix..
3.Once it forms the dough,Remove from fire
4.When it is cooled,knead them well
5.Apply oil in hands,make a spread over (applied oil) plastic or any leaves

Stuffings

This is usual stuffing
Coconut-1 cup
Jaggery-3/4 cup
Eachi pwd-a pinch
Ghee-2 tsp
Melt jaggery in 1/4 cup of water,add coconut ,elachi and ghee.Once it goes unsticky,Stuff in middle of Kozhukattai and Steam it for 2-3 minutes.Serve hot.

This is Sesame seed/Ellu Poranam
Sesame Seed-1/4 cup
Coconut-1/4 cup
Sugar-1/4 cup
Ghee-1 tsp
Dry Roast the sesame seed and grind with coconut.Boil sugar with 2 tbsp of water and once sugar melts,add the coconut and ghee.Once poranam goes unsticky,Stuff in kozhukattai and Steam it






This is Khus Khus Poranam,My Favourite
Coconut-1 cup
Khus Khusa-1/2 cup
Sugar-1 cup
Elachi-1 tsp
Ghee-2 tbsp
Dry Roast Khus Khus and Coconut.Grind them well.Make sugar syrup and add this coconut mix.Add Ghee and elachi ,stir it goes unsticky at bottom.Use this stuffing for kollukattai.

And a Final Kozhukattai is ready



Pidi Kozhukattai

Mix Coconut n Jaggery Ponam with rice dough and hold it tightly which is Pidi Kozhukattai



Ammani Kozhukattai

Fry mustard seeds,urad dal,curry leaves and red chilly flakes in oil.Add this seasoning to rice dough.Make fine balls and Steam it

Ven pongal





Ingredients
Rice-1/2 cup
Moong dal-1/4 cup
Water-3 cups
Pepper corns-1 tsp
Cumin-2 tsp
Curry leaves-1 handful
Asafoedia-1 pinch
Green chilly-2(chopped)
Cashew-as u like
Ghee-1/2 cup
Salt to taste

Method
1.Wash rice and moong dal,cook in air-tight pan or cooker with 3 cups of water and salt
2.Once cooked,fry rest of the ingredients in ghee and add it to rice
3.Stir well and serve hot

Paneer Fingers-My 100th recipe


Ingredients
Panneer-250 gms
Ginger garlic paste-2 tsp
Soy Sauce-1 tsp
Chilly Sauce-1 tsp
Tomato Sauce-2 tsp
Maida-2 tsp
Cornflour-1 tsp
Red color- a pinch
Chilli powder-1 tsp
Salt to taste
Bread Crumbs-1 cup
Oil to deep Fry

Method
1.Cut Paneer into long thick strips
2.Mix all the ingredients except the bread crumbs and form a nice paste
3.Add Paneer to it and marinate for half an hours
4.Toss each paneer in bread crumbs
5.Deep fry paneer fingers in medium flame
6.Dont let the masala leave off the paneer,give mild toss in bread crumbs
7.Dont over soak paneer in masala,as it ends break up

Kheema Kurma

Ingredients
Same as for kheema Balls
Coconut-1 cup
Onion-2
tomato-1
Green Chilly-2-3
Aniseed-1 tsp
Red chilly powder-1 tsp
Coriander powder-1 tsp
Turmeric powder-1/2 tsp
Salt to taste
Oil to shallow fry
Coriander leaves to garnish
Method
1.Make kheema balls and do not deep fry them
2.Fry onion,tomato in oil
3.Grain rest of the ingredients
4.Allow it to boil,add the kheema balls
5.Cook them for 10 mins
6.Garnish with coriander leaves

Keema Balls


I love mutton kheema,the most favourite in nonveg dish...Here is the recipe

Ingredients
Mutton kheema-250 gms
Chana dal- 3 tbsp
Green Chilly-3
Ginger Garlic paste-2 tsp
Onion-1 chopped
Coriander-1/4 cup chopped
Aniseed -1 tsp
Coconut-1/4 cup
turmeric powder-1/2 tsp
Salt to taste
Oil to Deep Fry

Method
1.Wash and Squeeze out excess water from kheema
2.Grain Green Chilly,aniseed,coconut,kheema,chana dal,ginger garlic paste and turmeric powder
3.Add onion,salt,coriander leaves to kheema and make tight balls
4.Deep fry them in med flame
5.If ur kheema gets loser or splits while frying,add chana dal powder
Yummy kheema is ready

Crab Fry




i am little panic to post my nandu varuval, Crab Fry... I here clearly say anyone can posted this recipe or may post it....Dont claim me its originally yours..We all sail in same boat of serving good recipes to the world(without expecting any return)....
This nandu varuval,i make it often(like every 15 days)..cos my husband bags lots of crab from market..as he loves it...Whenever i get ready to cook crab,he orders "more spice",even after tasting it,he says "it needs more spice".After three years of making crab,i got it right spice. Crab has its tendency to cook soon and also gives sweet taste

The crab is believed to be bought in full moon,cos its more fleshy and tasty(try it).It can reduce ur fever and cold illness soon...
Ingredients
Crab-1 kg (Buy soft/thin skin crab)
Onion-3
Tomato-2
Garlic paste-3 tbsp
Ginger paste-2 tbsp
Coconut-1 cup
Aniseed-1 tsp
Cumin-1 tbsp
Pepper-2 tbsp
Turmeric-2 tsp
Chilli powder-1 tbsp
Coriander powder-2 tbsp
Coriander n Curry leaves-optional
Oil to shallow fry
Salt to taste

Method
1.Wash Crab with 1 tsp of turmeric powder
2.Fry Onion,Tomato,Garlic,Ginger in oil to soft texture,then add turmeric,salt,chilli and coriander powder
3.Grain coconut,aniseed to fine paste
4.Powder cumin and pepper ,add half to coconut mixture
5.Add coconut mixture to the frying onion mixture
6.Stir until the masala turns red
7.Add the cleaned crab and close the lid(keep the flame in sim)
8.Open after the crab color turns red
9.Add the rest of the pepper n cumin powder and coriander leaves,Stir it well.
