Tomato-1,chopped
Red chillies-4
Turmeric-1/4 tsp
Oil-1 tsp

Bread Salsa Sandwich



Bread is the best way to (kick)start the morning breakfast...I tricked trying quick and spicy sandwich...

Ingredients
Bread-4 slices
Salsa-4 tbsp
Cheddar cheese-2 tbsp,grated
Pepper-half tsp
Butter-2 tsp

Method
1.Mix salsa,cheddar cheese and pepper
2.Apply butter both the sides of the bread
3.Stuff the salsa mix in btw 2 breads and toss them in tawa or toaster

Tomota Curry


This is south indian side dish for chapathi or roti...

Ingredients
Onion-1,finely chopped
Tomoto-2,finely chopped
Green Chilly-3,finely chopped
Turmeric powder-quarter tsp
Salt to taste
Oil-2 tsp
Mustard seeds/Cumin seeds-1 tsp(optional)
Curry leaves-a few

Method
1.Fry mustard seeds ,onion,tomato in oil
2.Once it is semicooked add turmeric powder,salt and green chillies
3.Add 1/3 cup of water and cook for 5 minutes
4.Garnish with Curry leaves

Potato Fry


I have seen n made many potato fry gone smashy at end...To avoid it,my mom dont cook it and she finely cut the potatoes into pieces and roast them,like this..I cook my potatoes in pressure cooker (half cooked) and peel the skin and cut them into med. pieces and toss them well in oil before adding my spices...

Ingredients
Onion-1,chopped
Tomato-1,chopped
Anniseed or Cumin-1 tsp
(Indian )Potato-3
Chilly powder-1 tsp
Coriander powder-2 tsp
Turmeric powder-Quater tsp
Salt to taste
Oil-3 tbsp

Method
1.Preboil the potatoes to half cooked
2.Peef them off and cut each into 7-8 pieces
3.Fry Aniseed,Onion,Tomato in oil
4.Add potatoes and toss them well ,until the outer is slightly turns crispy
5.Add the rest of the spicy powders and salt
6.Close the lid and cook at low flame for another 5 minutes

Yummy hot potato fry is ready

Falafel


Falafel is a mid-eastern food...i think there are two kinds of ppl..one who tasted it ,other never...Ppl who tasted ,sure they are crazy on it..I was searching for good recipe long time,and found it thru her...
Aarti paarti is amazing with her cooking skills...
Here is the best recipe from her


Ingredients
1/2 tsp fenugreek seeds
1/2 tsp fennel seeds
1/4 tsp coriander seeds
2 cup peas,cooked  and drained
1 shallot, peeled and chop roughly
2 clove garlic, peeled
Handful of fresh mint leaves
2 tsp of extra virgin olive oil
Salt and pepper
1/4 cup besan -chickpea flour; regular flour is a fine substitute
 oil for frying
quater cup of plain yogurt



Method
1.Dry Roast cumin,coriander and fenugreek seeds
2.Mix all the ingredients..And grain it to thick dough
3.Make flat patties or balls
4.I didnt deep fry it, rather i shallow fried it for 2 mins and baked it for 5 mins at high

Simple(Quick) Rasam


Rasam is the most favourite and best part in south indian meal....
Here is the recipe 
Ingredients
Tamarind paste-1 Full tsp
(Efficient and Easy to Use)
Water-1+half cup
(I checked with MTR brand,u add more at the end,if it tastes more tangy)
Turmeric powder-half tsp
Salt-Quarter tsp
Coriander leaves-Quarter cup
(Cut the coriander bunch with stem part)
Asafoetida-two pinch

To Season
Mustard Seeds-1 tsp
Red Chillies-2 nos(stems removed n unbroken)
(I ignore chillies,since i feed my daug)
Cumin-half tsp
Tomoto-1 (chopped)
Oil-1 tsp

Method
1.In a pan,Fry mustard seeds,cumin and Tomato in oil
(Tomato need not to fry completely)
2.Mix tamarind paste and water..If u taste it,it should be mildly tangy,if not add little water.
3.Pour the tamarind water to pan,add rest of the ingredients soon
4.Allow to boil ,when rasam bubbles on top,switch off the flame
Coriander stems gives good flavour to rasam..Try it

Cabbage Poriyal


Its the most wanted dish in south indian lunch..
Isn't it?..I dont like to cook vegetables in pressure cooker..I like the vegetables crunchy and not soggy nor over-cooked...U can also add cooked dal or coconut flakes..

Ingredients
Cabbage-2 cups
Green/Red chillies-3
Mustard seeds-1 tsp
Turmeric powder-half tsp
Curry leaves-2-3
Salt to taste
Onion-1 tbsp
Oil-1 tsp

Method
1.Chop onion and cabbage to fine pieces
2.Fry mustard seeds in oil,add the onion,curry leaves and cabbage
3.Saute them for few minutes until it is semi cooked and crunchy
4.Add Salt and turmeric powder before u switch off the flame

Spaghetti Bolognese









I made spaghetti for one of my weekend...We love pasta as much as rice..isn't it..Its easy to make one main course meal...I wish i can change my blog into Wikipedia of pasta...There are lots of variety of sauces and pasta....I wish i detail everything in future...Today i will give super hit sauce called Bolognese..The base is tomato,of course u can see from the color..People usually stir fry cooked pasta,vegetables/meat and italian herbs(Oregano,thyme,Rosemary...).If u have quarter an hour ,u can make this pasta..
About the cheese,the pasta mix well with soft cheese like Parmesan and Romana .....or any Italian cheese..U can also try ur own favorite cheese....
Here is the recipe
Spaghetti pasta-300 gms
Tomato puree-400 gms
Onion-100gms
Any chopped or grated vegetable-1 cup
(U can add jalapeno,olives,bell peppers..)
Garlic chopped cloves-2
Italian herbs-1 tsp
Oil -3 tbsp
Any cheese-As u like




Cook Pasta in boiling water,add some salt and oil






Once,the pasta is well cooked,the water bubbles on top



Drain the water,and keep the pasta aside



If u r using upto 250gms of pasta,add double the tomato puree(not tomato sauce).Bring the puree to a boil,add the vegetables,garlic,salt and the onions ,allow them to cook at least 10-15 minutes

Switch off the flame and add the herbs and grated cheese..Close the lid for sometimes



Here the hot Spaghetti Bolognese is ready

U can also mix Alfredo sauce(white sauce) with this which is my most favorite..Hope u seen smooching the pasta soon around..

Ven pongal





Ingredients
Rice-1/2 cup
Moong dal-1/4 cup
Water-3 cups
Pepper corns-1 tsp
Cumin-2 tsp
Curry leaves-1 handful
Asafoedia-1 pinch
Green chilly-2(chopped)
Cashew-as u like
Ghee-1/2 cup
Salt to taste

Method
1.Wash rice and moong dal,cook in air-tight pan or cooker with 3 cups of water and salt
2.Once cooked,fry rest of the ingredients in ghee and add it to rice
3.Stir well and serve hot

Paneer Fingers-My 100th recipe


Ingredients
Panneer-250 gms
Ginger garlic paste-2 tsp
Soy Sauce-1 tsp
Chilly Sauce-1 tsp
Tomato Sauce-2 tsp
Maida-2 tsp
Cornflour-1 tsp
Red color- a pinch
Chilli powder-1 tsp
Salt to taste
Bread Crumbs-1 cup
Oil to deep Fry

Method
1.Cut Paneer into long thick strips
2.Mix all the ingredients except the bread crumbs and form a nice paste
3.Add Paneer to it and marinate for half an hours
4.Toss each paneer in bread crumbs
5.Deep fry paneer fingers in medium flame
6.Dont let the masala leave off the paneer,give mild toss in bread crumbs
7.Dont over soak paneer in masala,as it ends break up

Aloo Paratha-An Easy Way




Ingredients

For dough
Atta Flour-2 cups
Salt-1/4 tsp
Water-1 cup
For stuffing
Aloo(Cooked n Smashed)-1 cup
Cumin seeds-1 tsp
Coriander leaves-1/4 cup
Garam masala-1 tsp
Salt to taste
To cook paratha
Butter or Oil (optional)
Method

1.Make soft dough and rest it for 10 minutes
2.Mix all the ingredients in a bowl for stuffing
3.Make (most)thin layer of chapathis
4.Spread the Stuffing on chapathi,apply some water on edges
and cover with another chapathi
5.Seal the edges well
6.Cook them on a tawa in low heat with butter or oil
This is the easiest way of meeting aloo paratha..isn't it?

Raspberry Mocktail


Ingredients
Raspberry Squash-30 ml
Lime juice-10 ml
Lemon Squash-2ml
Ice cubes-1 cup
Method
1.Mix Lime juice and Lemon Squash with 30 ml of chilled water
2.Mix Raspberry Squash with 150ml of chilled water
3.Take a tall glass,add lemon juice mix at bottom
4.Tilt the glass to horizontal level and pour the raspberry juice slowly to the glass sides(if u can)
5.Or u can pour directly to lemon juice
6.The purpose is u can retain two colors while serving
7.Add ice cubes on top

Spicy Veg Pulao

Spicy Vegetable Pulao
Ingredients
Jeera Rice-2 cups
Water-2cups+half cup
Any Mixed Chopped Vegetables-1 cup
Red chilli powder-1 tsp
Garam masala-1/2 tsp
Salt to taste
Cardamon-a few
Star anise-1
Green Chillies-2
Ghee-4 tbsp
Onion-1
Bay leaf-1
Tomato-1

Method
1.Take wide pan,add ghee-2 tbsp,fry bay leaf,Star anise,Cardamon
2.Chop Onions n Tomato and fry it
3.Add vegetables,Green Chillies(slitted),Salt,chili powder and garam masala
4.Add the water and allow it to boil
5.Add the washed rice and close with tight lid
6.Allow it to cook in medium flame
7.Once the rice is cooked,pour the remaining ghee and stir it
8.U can also garnish with coriander leaves

I used Carrot,Beans,Green Peas and Paneer.Cut Vegetables in equal size.So that it cooks evenly..

Italian Pasta


Ingredients
Pasta-3 cups
Mozerella cheese-1 cup
Parmesan cheese grated-1/2 cup
Basil leaves-2 tsp
Chopped Garlic-3 cloves
Fresh Cream-2 tbsp
Oil-1 tsp
Salt to taste
Pepper powder for Spicy
Coriander to garnish

Method
1.Cook Pasta for 8-10 minutes
2.And Drain them well
3.Fry garlic in oil
4.Mix Rest of the ingredients
5.Add the pasta and cheese mix n mix well
6.Serve hot

Vathal Vadagam (Indian Crispy)

Kothavaranga Vathal over Rice Vathal

The summer is started in many places..South indians use hot sun to make many cripsy dishes...they dry the vegetables with salt and some spice to save it for entire year.. This is almost like chips.

For Arisi Vathal(Rice )

Ingredients
Raw Rice-1/4 kg
Water -1.5 litres
 Salt

Method
1.Soak rice for 4 hours.
2.Dry it in a clean towel
3.Make fine powder of it
4.Sieve the rice powder
5.Add water n salt to rice powder to make pouring consistensy
6.Cook it until the dough becomes unsticky to ur wet hands
7.Remove immed., and use murukku presser and do some lines in a plastic paper under the sunlight..
8.Leave it a day and turn the vathals to dry out....
9.Save all and deep fry them whenever needed




Nada Vathal


Ingredients

Raw Rice-2 kilos
Water-12 litres
Lime-2
Salt to taste

Method
Same as Arusi Vathal
Add Lime juice to water n salt



Arisi Muruku Vathal
Ingredients
Raw Rice-1 kg
Water-3 litre
Green Chillies-15
Lime-2
Salt

Method
1.Same as nada vathal
2.Use murukku shape of vathal


Sabudana (Javarisi) Vathal

Ingredients

Javarisi-4 cups
Water-20 cups
Lime-2
Curd-2 cups
Green Chillies-15
Salt to taste

Method
1.Mix water n javarasi in heavy bottom pan
2.Keep Stirring until javarasi cooks well
3.Mix Curd,salt and lime add to javarasi
4.Stir until u get thick paste
5.Pour by spoon in plastic sheet
6.Allow it to dry well and store it

Carrot chutney



i have grown up in my grand ma's house,where i get put on lots of weight eating vegan food...It was tasty and lip smacking ones..my grand ma makes lots of vegetable dishes like kootu,varuval,thuvayals and soups...I learnt cooking from her,she drills me well to do work.. this recipe is from her.Carrot and Curry leaves gives nice flavour,so dont omit both of them..
Ingredients
Carrots -150 gms
Curry leaves-handful
Tomato-1
Ginger-2 gms
Red chilly or Green chilly- a few
Coconut-1 tsp
Turmeric powder-1/4 tsp
Salt to taste
Oil to shallow fry
Few coriander leaves (Optional)
Method
1.Slice the carrots and tomato
2.Shallow fry all the ingredients
3.Grain it well in blender
4.Can serve with dosa,idli or pongal

Rich Onion Raita

I learnt this recipe from a TV show,I am inspired by its great taste...Any party,Make this special rich raita,people cant find its ingredients ,but they finish it first in the plate.....
Ingredients
Onion Fine chopped- 1 cup
Walnuts-1/4 cup
Mint-10 leaves
Coconut-2 tbsp
Thick Curd-One and half cup
Salt to taste
Method
1.Grind Walnuts,mint and Coconut coarsely
2.Add Onions,Curd and Salt to it.
3.Can also Grind all the ingredients to fine paste
4.Serve Chilled

Idly


Idly is most important breakfast in south india....Men can't live without idlies in their food.My father eats idly everyday like every south indian do...If u marrying a guy from thanjavur or south side of india,karnataka and tamilnadu,then u must learn to make idlies for sure...My mother used to make idly dough(maavu) in attu kal as 5 kgs..Attukal is ancient flour grinding tool,we soak rice and urad dal for long hours,then grind in heavy stones sealed in floor..We have to roll 10 kilo weighing stone with hands for hours ..Now we have tilting grinder,which is more efficient and easy to use.We make thick dough(flow consistency) with right ratio of soaked rice and urad dal...I made so many experiments , always went wrong to get soft and fluffy idlies.... I tried many wrong recipes,wrong way of handling doughs,wrong way of cooking it... totally confused...I used to watch how they make idlies in hotels..

I been to bangalore recently..went to MTR(Mavalli Tiffin Room),Bangalore.I went at 7 am , many men and women clubbing and sipping coffee by standing and sitting in table.I couldnt have space to walk in....All of them enjoyed their friendships,the food and the love of place...Everyone stays for hours...And more happy to see the hotel allowed them to.....

This is called hospitallity,true respect to mankind.... Oh my gosh...I am moved to (by) MTR from idli....heeheee....They serve one big idly in a cup,1 tsp of ghee ,green chutney and sambar.I saw people omit green chutney ,pour sambar and ghee on idly.I tried the same way,it was awesome,mouth watering yummy breakfast i ever had...

Here is my way of making idli dough..

Using Rice and Urad dal...at ratio of 4:1

If u use,

1:1 too light and soft ,ferment soon and goes tangy soon

2:1 Good and Soft,Retains only for two days

3:1 and upto 5:1 Good and Soft for only one day

Wash Rice and Urad dal seperately....soak rice for 2 hours and urad dal for 30 minutes...Grind rice with 2 cups of water(can add more) to make flowing consistency dough...Add 1/2 water to urad dal and grind to thick(butter) holding consistency...Make urad and rice dough and add 3 tbsp of Rock Salt...Mix well and leave to ferment for 8 hours...If ur place is not sunny,u can try yeast or keep in oven for warmth....

After fermentation,the dough will be double in amount.Do not add water..Do not stir..Just take scoop of idly dough and steam it for 5 minutes(dont over steam it)....

Serve hot with any chutney.

Instant Pizza

Ingredients
Onion-1 chopped
Tomato-1 chopped
Coriander/celery-1/2 cup
Mozarella cheese-1 cup
Tomato Sauce-2 tbsp
Pizza base-1
Red Pepperico Sauce-1 tsp
Green chilli sauce-1 tsp
Thyme,oregano,Basil,paprika,lime rinds,pepper herbs-1 tsp
Salt to taste
Method
1.Mix all onion,tomato,celery,sauces,herbs in a bowl
2.Take a pizza base and spread the mix over it
3.Spread some more crushed herbs on it
4.Spread grated cheese on top of it
5.Bake it for 200*C for 10 mins

Bread Toast 3

Ingredients

Bread slice-2
Green Chutney-2 tbsp
Onion chopped-2 tbsp
Green Chilly(Finely chopped)-1
Mayonnaise-1 tbsp
Cheese slice-1


Method

1.Cut the edges of the Bread
2.Spread Mayonnaise on one bread
3.Spread green chutney on another side
4.Spread all the onion and green chilly on green chutney bread
5.Place the cheese slice on it
6.Close it with mayonnaise bread
7.Toast it on toaster or on tawa
8.Cut the bread into four triangles and serve with tomato ketchup
