Happy holidays-Fruit Cake

Merry Christmas and happy holidays to everyone..i am sorry i m  late to wish u...I am quit sad i miss my country and their christmas feast...Hope i been in ur prayers(I can hear many r cursing me,hold on ur eeeerrrrrrrrrrr teeth biting sounds for not being regular)..This is the month ,i made least no of postings..Sorry guys ,i cudn't make it..It is indefinitely possible to cook n manage my too much naughty daughter..She is grown height..She can easily get (fetch) whtever she wants from my kitchen,closet....

I made Fruit Cake for Christmas..Can u see the santa on my cake?...This is an easy pesy cake,just mix all to bake(and fruit cake always works for me)..I  used presoaked plums,tutty fruits and pecans....Some equal amount of butter,sugar,flour and eggs..Yeah it Vah chef's recipe...(I followed the same recipe with garam masala)...So it tastes to say " Vah reh vah"

First Anniversary

Completing 12 months and So,Well..Today is the first Anniversary of this blog


  • Make the Cake mix as per instructions given on it
  • I measured half cup of dough and added few drops of color

  • I poured it on 6 inch pan and baked for 10 minutes
  • I had only basic colors of red,yellow,blue and green,I mixed 2-3 colors and created 12 colors
  • The Duncan cake mix was so light,broken..The very light cake i ever seen

  • The BC cake mix is best to make layer cakes
  • We dont like frosting,so i ignored it..But i used BC frosting inbetween the layers to set them well
  •  I refrigerated the cake immediately to avoid drying up,the cake was so soft (U can see them from pictures)

Do u think my cake slice can't stand??..Lets C..

Garlic Chutney-Poondu Thovayal

Garlic pearls-1 cup
Red chillies-4
Turmeric-1/4 tsp
Oil-1 tsp
Salt to taste

1.Shallow fry all the ingredients in oil
2.Grain them to fine paste

Chicken Roast -Game Hen

I never roasted full chicken.... I tried this game hen version for my trial...It been perfect roasted in indian masala...Yumm...
Game Hen-1
Chilli powder-2 tsp
Turmeric powder-1 tsp
Garam masala-1 tsp
Cumin powder-1 tsp
Pepper powder-1 tsp
Curd-2 tsp
Lime juice-2 tsp
Salt to taste
Oil to coat
1.Thaw the chicken well and clean them
2.Use kitchen tissue/napkin and remove the moist all over the hen
3.Mix all the ingredients except the oil
4.Apply the masala on hen and marinate atleast 2 hours
5.Preheat the oven at high temperature(550) for 10 minutes
6.Move the rack near to top oven
7.Apply oil all over the hen
8.Reduce the temperature to 450 and baken hen for 20-30minutes
9.Serve hot with lettuce and salad

Newyork Cheesecake

I been to cheesecake factory last year..Just loved the sour,sweet and creamy cake...I went back to India and tried No Bake Cheesecake,which turned out to be huge hit..In india,its too costly to buy Cream cheese(main man)
..So we use hung curd(Full Fat Curd hanged for 12 hrs)..No bake cheesecake is very easy to make,if it sets well for u...
I want to bake cheese cake someday,i tried  newyork basic cheese cake recipe which was awesome...The cakes made at home are cheaper and the best..But while considering cheesecakes,the fact goes myth...The cost of making it and buying it is more over the same or higher..
I cannot afford to buy 4 x 8 oz cream cheese boxes,as every recipe needs...I did some cost cutting and made it fair..

I baked in a 12 inch spring form pan,so i used recipe with my add-on flavour..I added half cup mango pulp and half cup sugar
U can find lots of tips while baking the cake ,jus google them...Usually cheesecake cracks on top,thank god,it didnt happen for me..But i little over baked my cake...ooouuccchh..Its my first attempt..All the friends and family loved it..The kids fought for the last slice..Sure ,It tastes yummy...

2(8 oz) cream cheese packs
Sour cream-half cup
Sugar-1+half cup
AP flour-1 tablespoon
Butter-1 tablespoon
Vanilla Essence-1 tsp
Mango pulp-half cup

For Crust layer
Graham Crumbs-2 cups
Sugar-Quarter cup
Butter-half cup
Melt the butter and mix it to crumbs and sugar..Layer the crumbs and tab them well.Freeze them,until u do the baking...
1.Thaw the cream cheese and make them soft
2.Beat the eggs,sugar and Vanilla essence well
3.Beat the cream cheese,sour cheese and butter well
4.Add the AP flour and mango pulp to cream cheese and beat them
5.Add the egg mix to cream cheese and beat them for 1 minute
6.Add cream cheese to baking pan and bake it for 30-40 mins at 350F
7.Insert the knife in center to check it is well baked
8.Once done,refrigerate them

Pori Urundai- Puffed Rice balls

Life is not always what we dream...I couldnt blog for a week as i promised...The seven days went "just like that" ,I couldn't believe its december,christmas time...nope i am not posting any cake or dessert..Its "Karthikai Deepam"...My most fav. festival...By 6 in the evening,all the ladies at home will start lightening the lamps..and make sweets in jaggery and worship god...When i was child,they used only "agal vilakku" clay made candle..I must say I am crazy lighting lamps...My mother buys lots of( liters of) oil...I go no lazy cleaning up the vilakkus,drying it,applying turmeric and kumkum,pour oil and placing them in order on trays...When the evening arrives,i would light up all the lamps and decorate the entrance n the terrace of my home...I never leave any single lamp to be idle on that day..I drill my mom to make kollam in nook n corner of  veranda....U know How many i wud lighten up...It would be thousand lamps...My paternal uncle(dad's bro) says u r just like my mom,in early 1950s ppl gathers in thanjavur to see the lamp house....My mom tells me whenever karthikai deepam passes,she miss me a lot... After marriage,i had only few vilaakus to light up my small apartment...Wish to see those Kuthu vilakku,Sara vilakku..
Now,Dont ask my sad story...I always have some..I had one and only akal vilakku and 4 candles...I managed to light them up on top ,so that i can save them from my naaty looty daug and To save my wood(be)  house too ;-)...

Puffed Rice-3 cups
Jaggery-1 cup
Cardomon powder-1 tsp
Coconut Scraps-a few
Ghee-2 tsp
Water-Quarter cup

1.Mix jaggery and water and make thickest syrup
(when all the water evaporates,the syrup bubbles on top)
The right consistency is the syrup shd not melt in water
2.Roast the coconut scrap in ghee and mix with puffed rice
3.Add the puffed rice and cardomon powder to the syrup,make as balls when it is hot
(Apply some oil in hands,so that it wont stick to hands)

Pepper Chicken

Tomoto-1 ,chopped
Ginger garlic paste-1 tsp
Pepper-1 to 2 tsps
Cumin-2 tsps
Green chillies-2, Silted
Coriander powder-2 tsps
Turmeric powder-half tsp
Curry leaves a few
Salt to taste
Oil -2 tsp
1.Fry onion,tomato,Green chillies and GG paste in oil
2.Add chicken and stir,add the turmeric and coriander powder
3.Add half cup of water,salt and close the lid,cook for 10 mins(until chicken cooked well)
4.Grain pepper and cumin in blender and add to chicken
(if u want more spicy,u can add more pepper)
5.Garnish with curry leaves

Pal Paniyaram

hi guys...hope u had great weekend..i am sure if u r struggling with ur two year baby girl,this chettinad dessert is going to be peace maker for u..Ur kid will luv it and gain some energy..I am a(desperate) mother who struggle to feed indian food to my dau...I have to work hard until she sticks to indian taste not for cookies n junk food..No one knows wht the kid likes unless u feed them...
I tried this paniyaram while making my idli-dosa batter...Take equal amt of urad and rice dough ,mix it well with salt..U need not have to ferment it..
Coconut milk-1 cup
lighter is better and creamer is best ;-)
Elaichi powder-a pinch
Sugar-half cup
Idli dosa batter-One cup
Salt to taste
Oil to deep Fry
1.Heat the oil,drop some batter as small balls and fry them till golden brown
2.Dilute coconut milk with half cup of water,sugar and boil them
3.Add the balls and elaichi powder to the milk
4.Boil for 2 mins and Serve hot

Do not feed too thick coconut milk for kids,as they go giddy/drowsy/sleepy
Add the balls to cow's milk and 2-3 tsp of coconut milk is better to feed one year kid
Make thick batter and filter the excess oil if any ,using tissues

Bread Salsa Sandwich

Bread is the best way to (kick)start the morning breakfast...I tricked trying quick and spicy sandwich...

Bread-4 slices
Salsa-4 tbsp
Cheddar cheese-2 tbsp,grated
Pepper-half tsp
Butter-2 tsp

1.Mix salsa,cheddar cheese and pepper
2.Apply butter both the sides of the bread
3.Stuff the salsa mix in btw 2 breads and toss them in tawa or toaster

Tomota Curry

This is south indian side dish for chapathi or roti...

Onion-1,finely chopped
Tomoto-2,finely chopped
Green Chilly-3,finely chopped
Turmeric powder-quarter tsp
Salt to taste
Oil-2 tsp
Mustard seeds/Cumin seeds-1 tsp(optional)
Curry leaves-a few

1.Fry mustard seeds ,onion,tomato in oil
2.Once it is semicooked add turmeric powder,salt and green chillies
3.Add 1/3 cup of water and cook for 5 minutes
4.Garnish with Curry leaves

Potato Fry

I have seen n made many potato fry gone smashy at end...To avoid it,my mom dont cook it and she finely cut the potatoes into pieces and roast them,like this..I cook my potatoes in pressure cooker (half cooked) and peel the skin and cut them into med. pieces and toss them well in oil before adding my spices...

Here the recipe for u
Anniseed or Cumin-1 tsp
(Indian )Potato-3
Chilly powder-1 tsp
Coriander powder-2 tsp
Turmeric powder-Quater tsp
Salt to taste
Oil-3 tbsp

1.Preboil the potatoes to half cooked
2.Peef them off and cut each into 7-8 pieces
3.Fry Aniseed,Onion,Tomato in oil
4.Add potatoes and toss them well ,until the outer is slightly turns crispy
5.Add the rest of the spicy powders and salt
6.Close the lid and cook at low flame for another 5 minutes

Yummy hot potato fry is ready

Falafel is a mid-eastern food...i think there are two kinds of who tasted it ,other never...Ppl who tasted ,sure they are crazy on it..I was searching for good recipe long time,and found it thru her...
Aarti paarti is amazing with her cooking skills...
Here is the best recipe from her

1/2 tsp fenugreek seeds
1/2 tsp fennel seeds
1/4 tsp coriander seeds
2 cup peas,cooked  and drained
1 shallot, peeled and chop roughly
2 clove garlic, peeled
Handful of fresh mint leaves
2 tsp of extra virgin olive oil
Salt and pepper
1/4 cup besan -chickpea flour; regular flour is a fine substitute
 oil for frying
quater cup of plain yogurt

1.Dry Roast cumin,coriander and fenugreek seeds
2.Mix all the ingredients..And grain it to thick dough
3.Make flat patties or balls
4.I didnt deep fry it, rather i shallow fried it for 2 mins and baked it for 5 mins at high

Simple(Quick) Rasam

Rasam is the most favourite and best part in south indian meal....
Here is the recipe 
Tamarind paste-1 Full tsp
(Efficient and Easy to Use)
Water-1+half cup
(I checked with MTR brand,u add more at the end,if it tastes more tangy)
Turmeric powder-half tsp
Salt-Quarter tsp
Coriander leaves-Quarter cup
(Cut the coriander bunch with stem part)
Asafoetida-two pinch

To Season
Mustard Seeds-1 tsp
Red Chillies-2 nos(stems removed n unbroken)
(I ignore chillies,since i feed my daug)
Cumin-half tsp
Tomoto-1 (chopped)
Oil-1 tsp

1.In a pan,Fry mustard seeds,cumin and Tomato in oil
(Tomato need not to fry completely)
2.Mix tamarind paste and water..If u taste it,it should be mildly tangy,if not add little water.
3.Pour the tamarind water to pan,add rest of the ingredients soon
4.Allow to boil ,when rasam bubbles on top,switch off the flame
Coriander stems gives good flavour to rasam..Try it

Fulka/Pulka Roti

Pulka Roti is most fav gujarati roti and very easy to make...My mom do the kneading and rolling the dough very well...She makes 40 rotis for entire family at one stretch..Its lovely when someone makes it and I eat it simultaneously.. :-)

Atta/whole wheat flour-2 cups
Milk-3/4 cup
Sugar-1 tsp
Salt-1 tsp
Oil-2 tsps
Water-1/4 cup

1.Mix all the dry ingredients and add milk n water little by little(Add more water if u want)

2.Knead them well into a soft dough ,rest them aside for sometime

3.Roll into roti as thin layer(dust li'l flour)..roll the edges and make roti in even thickness

4.In med flame,Cook the roti in flat tawa ,when it bubbles,flip into other side

5.Roti pops out,apply oil both sides and serve hot

U can also cook directly on flame with precautions...

Cabbage Poriyal

Its the most wanted dish in south indian lunch..
Isn't it?..I dont like to cook vegetables in pressure cooker..I like the vegetables crunchy and not soggy nor over-cooked...U can also add cooked dal or coconut flakes..

Cabbage-2 cups
Green/Red chillies-3
Mustard seeds-1 tsp
Turmeric powder-half tsp
Curry leaves-2-3
Salt to taste
Onion-1 tbsp
Oil-1 tsp

1.Chop onion and cabbage to fine pieces
2.Fry mustard seeds in oil,add the onion,curry leaves and cabbage
3.Saute them for few minutes until it is semi cooked and crunchy
4.Add Salt and turmeric powder before u switch off the flame

Chicken Dum Biryani (Muslim style)

Basmati Rice-2 cups
Dry spices(bayleaf,star anise,cardomon)-a Few
Chicken-500 gms
Curd-half cup
Garam masala-one tsp
Chilli powder-two tsps
Cumin powder-one tsp
Turmeric powder-1 tsp
Salt-1 n 1/2 tsps
Corainder n mint leaves-1 cup
Ginger garlic paste-1 tsp
Onion chopped-half cup
Tomato-half cup
Green chilly-2
Brown onions-half cup
(Chopped Onions fried to brown)
Ghee/oil-1 cup
Rose essence-half tsp
Saffron syrup-1 tsp

1.If u skip soaking the rice,it wont be cooked well
2.Dont over cook the rice in water ,i guess two-three minutes is enough to wait for it
3.Do not stir often,the rice cud break

1.Marinate the chicken with all spice powders,curd and salt for 2 hours
2.Soak the rice for 20 minutes
3.Fry onion,tomatoes,green chillies,ginger garlic paste and the chicken in oil for 5 minutes in medium flame

4.Boil  4 cups of water at high flame
5.Add the dry spices,a tsp of oil and the rice to water
6.Wait for 2-3 minutes or until the rice is half cooked,drain the water immediately

7.If the rice is overcooked ( u can show the rice in running water )and add some oil to stop the cooking process
8.In thick bottom pan, Layer Chicken,Rice,Brown onions,mint n coriander leaves (u can also repeat the layer)

9.Close with the tight lid (U can stick  any wet dough to seal the edges,so the heat ll not escaped)

For dum(u can choose any one)
1.Use a tawa or wide pan ,place the biryani pan on it,cook at med-low flame for 30 minutes
2.Place the biryani pan in preheated oven at med flame for 20-30 minutes
3.Use can also use the pressure/slow cooker to make this dum

When it is done..
Add the saffron syrup and rose essence and close the lid for 5 minutes...Serve with my Onion raita and celebrate my blog anniversary ;-)

Banana Bread/Cake

                                                       The first time i ever ate banana bread was in my pg hostel.When my friend pranathi returned from hyderabad....(pranathy is soft and no bad habit girl...)She offered me few pieces from bread loaf...Later she was too kind to let me have entire loaf at one go..I still wonder how good she is!!!!!!!!!!!!.....I became big fan of banana bread,started chasing for recipes of banana bread which tastes like wht i ate...I almost tried around six-seven recipes and happy to share the best one with u..I give u more tips full stretch with my failure stories...
                 I dont know why they call it banana bread not a banana cake..Might be rhythmic?..                                                          Recipe Courtesy:Joy of Baking
     I halved the recipe ,since i had one banana and an egg...

1/2 cup  Walnuts or pecans,untoasted
3/4 cups  All-purpose flour
1/2 cup granulated white sugar
1/2 teaspoons baking powder
a pinch of baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 egg,  beaten
1/3 cup unsalted butter
1 ripe large banana (about 1/2 cup)
Quater tsp of Vanilla essence
1.Whip the banana and Vanilla essence in blender to fine paste
2.Mix all the dry ingredients well
3.Melt the butter to fluid 
4.Roast the nuts in same pan in which u melted the butter 
5.Beat the egg fluffy and keep aside
6.Mix the dry ingredients,banana,melted butter and nuts well
7.Add the beaten egg and fold the dough
(Taste the dough,it tastes yumm..If u want more sweet,u can add sugar now)
8.Preheat the oven for 10 minutes at high temperature
9.Pour the dough into greased baking pan
10.Bake them for 20 minutes at high(350*) or until it turns brown.
Some tips
Do not smash the banana into pieces,make fine paste
If the dough is not semi-flowing consistency,adjust with adding milk
Dust the nuts with flour as it spreads all over the cake
Cinnamon gives nice zest to the cake
Substitute AP/maida flour to wheat flour, it works better too
When its done,roll the knife around the edges
Allow to cool down few mins to unmould the cake,or else it breaks at ends

Cream of Soup


              Hope u all enjoying the fall...We got the snow early and some shots for u at the end...Few months back,when my family were busy shifting and travelling,also went ill...We were opt to have our lunch and dinner out..My husband choses the kerala restaurant "Eden"...where we hang on,when we are not really well..The cream of soup tastes like heaven, when u have the flu...and the energy is boosted to enjoy the rest of the menu ;-)...
Here is the recipe i got it from my aunt with my own zest...

Sweet Corn(Tin)-1
Milk-1 cup
Veg Stock/chicken broth-1 cup
Spring Onion chopped-1(Optional)
Any Veg or white Meat-Half cup
Cream cheese/Fresh Cream-1 cup
Cornflour-1 tsp
Egg White-1(Optional)
White/Black pepper and Salt to taste

1.Boil Sweet corn,Veg in the Vegetable stock...
2.Mix Cornflour in milk and add to boiling soup(low flame)
4.Add rest of ingredients except the cream
3.Whisk the egg white with salt and pour it on top
4.Remove it from flame,and add the cream
5.Top it with croutons roasted in desi ghee/butter
