Chettinad Kara Kulambu/செட்டிநாடு காரகுழம்பு


The kulambu has made with loads of spices..Stands best with rice,dosa and idly too...The recipe is mostly used in hotels/restaurants,quit easy to make...I used Manga and sundaikai vathal ,instead of veggies...Of course ,u can use can any fresh/dried vegetable. U can store it in the fridge and enjoy till it gets over...

Ingredients
To make masala powder
Toor dal/Tuvaram paruppu-1 tsp
Bengal gram dal/Kadala paruppu-1 tsp
Urad dal/Ulitham paruppu-1 tsp
Coriander seeds/Dhaniya-1 tsp
KhusKhus/Kasakasa-1 tbsp
Fenugreek seeds-1 tsp
Red Chillies-6
Asafoedia-1/2 tsp
Cinnamon stick-one inch


For Kulambu
Kathirikai/Brinjal-1/4 kilo,sliced
Tamarind-1 lemon size
Small onions-1 cup,sliced
Jaggery-1 tsp
Coconut-half,grated or 
Coconut milk
Turmeric powder-1/2 tsp
Sesame oil-50 ml
Salt to taste

Method
1.Dry roast all the masala ingredients ,cool them and grind into fine paste along with the grated coconut
2. Soak the tamarind in water for 20 minutes and extract the pulp with 4 cups of water
3.Heat a fry pan,add the oil ,throw in the mustard seeds,small onions and the Brinjal and saute it for few mins
4.Add the tamarind water,ground masala paste and the turmeric powder
5.Close the lid and cook for 10-15 minutes in low flame
6.Add the salt ,jaggery and off the flame



Tips
1.If u r grinding the masala in ammikallu,the taste will reach another (best) level
2.Instead of brinjal,I used half cup of dried sundakkai and 3-4 dried mangoes,Just soaked them in hot water and added to the onions
3.Instead of  grated coconut ,u can add coconut milk too
4.Add half tsp of chilli powder to it,if u want it more spicy,otherwise leave it as it is.

Strawberry Lollipops



I made this fruit lollipop completely edible,so no chop sticks needed to hold this lollipop...I got many pats on the back for making this in a party...Making this lollipop is so easy,but i spent an hour to click the pictures..


Ingredients
Strawberry-A dozen
Melted Chocolate-half cup
Strawberry/Chocolate Wafer rolls/cigars-12

Method
1.Melt the chocolate and temper it to smooth paste
2.Remove the leaves from strawberries and scoop till half inch
3.Dip the edge of the roll in the chocolate and insert the strawberry 
4.Refrigrate the strawberry and dip in  the chocolate until it coats well.
5.Put them back in fridge and use it  

I get good strawberries in india and it is season now...If the strawberries are tangy,Scoop an inch in center and soak them in sugar syrup (A mix of half cup of sugar+quater cup of water) for ten minutes..Then,remove the strawberries and use it as u like...

Smoky Raw Banana Roast/சுட்ட வாழைக்காய் வறுவல்


 Raw Banana roast is usually made in south indian homes...But i got the twist of smoking it in fire, before the doing the roast...I like smoky vegetables...Its interesting ,so every cook enjoys making it..

Ingredients
Raw banana-2
Channa/Bengal gram-3 tbsps
Red chillies-5-6
Fennel-1 tsp
Curry leaves-An arc
Oil to Shallow fry

Method


Skew the raw banana in metal skewer and show it in medium flame


When the skin turns quit dark all over..its done..
Cool it completely and Peel the skin and Chop the plantain


Fry three tablespoons of channa dal(கடலை பருப்பு) in oil
along with the red chillies


Allow it to cool and grind it coarsely


In a pan,pour the oil,throw curry leaves 


and fennel seeds


Add the chopped raw banana and saute a bit


Add the powder and salt now...Roast them well


While peeling the skin,make sure u dont touch the plaintain  flesh with ur dark hand...
it will give the burnt flavour
U can substitute the channa dal to toor dal

Strawberry Coconut Crepes



This dessert will give a break in baking and its completely for sweet tooth...Making crepes are easy too...All we need is to make lump-free batter...I have followed an excellent recipe...U can blindly fall in love with fruit crepes...Make it to ur valentine and Enjoy!


Ingredients
For the batter
Maida-400 grams
Egg-2
Milk-400 ml
Water-200 ml
Vanilla essence-1 tsp
Sugar-4 tbsp
Butter for brushing

For the filling
Fresh Strawberries-400 grams
Fresh coconut-1/2 ,Grated
Sugar-4 tbsp
Whipped Cream


Method

1.Slice the strawberries ,grate the coconut and add the sugar.Set aside


2.Then,Beat egg with vanilla essence,sugar and salt


3.Take flour in a bowl and add the egg mixture


4.Now,add the milk and water to make a fine batter(without lumps)


 and strain the batter


5.Heat the tawa and slightly brush with the batter,then using a round spoon,
pour the batter and spread it nicely


6.Cook both the sides 


7.Finally fill the crepe with strawberry filling and whipped cream and fold it

Make the crepe thiner,thick or crispy..All will be equally good



U can pipe some Chocolate/Strawberry sauce in the filling or on the top...But i like this way too...

Praline Sponge Gateau


After baking many cakes and brownies,i am here sitting damn tired...All i have the energy to edit the pictures and  blog it now...However i have baked various cakes,but not of even half of them are posted here...Well,I dont bake just to blog.Many cakes are long process and needless to say high in calory...This cake is my husband's favourite..There is no need for butter and baking powder!
Cake is so easy to make,and taste just classic....



Use the praline as much u can,and it takes the best with this cake

Malabar Fish Curry



To all the fish lovers,this fish curry is must to try and also its one of my favourite fish curry,the recipe I used here is little elaborate and followed by generations of a wonderful family…I have used cocum/kudam puli  so called kerala puli that is quit different from the usual tamarind.The cocum gives extra- ordinary flavour to the curry…So,dont miss using cocum in this recipe.

Ingredients
Seer Fish,sliced-1 kg
Lime-1
Curry Leaves-Few
Onion Sliced-1 (Big)
Tomatoes sliced-2(Big)
Green Chillies-1-2 slit
Ginger Garlic paste-2 tsp
cocum-2-3 pieces
Water-1 cup


To Dry Roast
Small Onions-8-10 sliced
Onion-2,sliced
Curry leaves-handful
Mustard Seeds-1/4 tsp
Methi seeds-1/4 tsp
Coriander seeds-1 tbsp
Fennel seeds-3/4 tsp
Red chilli -5
Coconut, grated-1 cup
Salt to taste


Method
1.Marinate fish with lime and salt.Set Aside


2.Dry roast small onions,onions,curry leaves,mustard,methi,coriander and fennel seeds,who red chilli and grated chilli.Grind to a fine paste


3.In a kadai,pour coconut oil,throw in the curry leaves,add the sliced onions and saute.


4.Then add in the slit green chillies,ginger garlic paste and fry for a couple of minutes.Add the tomatoes and let it cook.


5.Then add in the dry roast ground paste and fry for a couple of minutes.


6. Add the fish pieces along with a cup of water & cocum.Let it cook.
7.Garnish with curry leaves

While serving ,remove the cocum pieces and adding too much of cocum will give burnt flavour to the dish….

Spinach Malfati


 Malfati is one of the best serving for kids with the healthy combo of spinach and paneer....This is also an italian dish,but the recipe is slightly twisted to indian style 




For spinach dumplings
Fine chopped spinach leaves-3 cups
Crumbled paneer/Ricotta cheese-3/4 cup
Nutmeg powder-2 pinches
Green chilli-1/2 tsp,chopped
Plain flour-2 tbsp
Baking powder-2 pinch
Salt to taste

For the Tomato Sauce
Tomato puree-1 1/2 cup
Garlic-1 tbsp,chopped
Spring Onion-2,chopped
Chilli flakes-1 tbsp
Chilli powder-1 tsp
Tomato puree-2 tbsp
Milk-4 tbsp
Oil-2 tbsp
Salt to taste
For the topping
Some grated cheese

For the Spinach Dumplings


1.Steam the spinach leaves for 5 minutes and squeeze out the water.keep the water aside for use in the tomato sauce


2.Combine all the remaining ingredients and shape into balls
3.Steam for 5 minutes and keep aside

For the Tomato Sauce


1.Heat the olive oil,add the garlic and spring onions and saute for 1 minute


2.Add the tomato pulp and cook till the sauce thickens


3.Add the chilli flakes,chilli powder,tomato puree,slat and half cup of drained spinach water and bring to boil
4.Add the cream.Mix well and keep aside


How to Serve
1.Place the dumplings in a baking dish
2.Pour the tomato sauce on top and sprinkle the grated cheese over it
3.Bake in a pre-heated oven at 200*C for 15 minutes

Serve Hot.
