Mutton Chukka/Sukka


Ingredients
Mutton-1/2 kg
Onion-3
Tomato-3
Ginger garlic paste-2 tbsp
Green Chilly-3 nos
Cumin seeds-1 tsp
Red chilly powder-3 tsp
Corainder powder-3 tsp
Turmeric powder-1 tsp
Star anise-2
cloves-5
Bay leaf-1
Cardomon-3
Oil-3 tbsp
Garnish(optional)
Coriander leaves-1/2 cup
Curry leaves-a few
For Paste
Coconut-1 cup
Khus Khus-1/4 cup


Method
1.Wash the mutton and squeeze out the water
2.Use pressure cooker to make this recipe,Heat oil :Add the dry spices of star anise,
bay leaf,cardomon and cloves
3.Add chopped Onions and tomatoes
4.Add ginger garlic paste(So that it wont stick to bottom) and slited Green chillies
5.Add mutton and rest of the spice powder
6.Stir until the spice blends well
7.Add two cups of water(if u want gravy) or just add one cup of water
8.Close the lid and cook it in lowest flame for 30 minutes
9.Dry Roast coconut,khus khus and cashews and grind them to fine paste
10.Add this paste to mutton and cook for 5-10 mins
11.U can add water for gravy,or roast it until it turns out red dry chukka

Aloo Paratha-An Easy Way




Ingredients

For dough
Atta Flour-2 cups
Salt-1/4 tsp
Water-1 cup
For stuffing
Aloo(Cooked n Smashed)-1 cup
Cumin seeds-1 tsp
Coriander leaves-1/4 cup
Garam masala-1 tsp
Salt to taste
To cook paratha
Butter or Oil (optional)
Method

1.Make soft dough and rest it for 10 minutes
2.Mix all the ingredients in a bowl for stuffing
3.Make (most)thin layer of chapathis
4.Spread the Stuffing on chapathi,apply some water on edges
and cover with another chapathi
5.Seal the edges well
6.Cook them on a tawa in low heat with butter or oil
This is the easiest way of meeting aloo paratha..isn't it?

Rava Dosai


Ingredients
Rava-1 cup
Maida-half cup
Rice flour-half cup
Salt to taste
Oil-1/2 cup
Rest is optional
Pepper corns-2 tsp
Cumin-2 tsp
Curd-1/4 curd
Green chilly chopped-2
Asafoedia-2 pinches
Optional
Roasted nuts-a few
Coconut pieces-a few
Chopped ginger-a few
Bold

Method
1.Mix all the ingredients and add water 2-3 cups of water
2.The dough should be thinest consistency like buttermilk
3.Heat the dosa pan and Pour the dough(dont spread it like9 normal dosa)
4.Once u pour,it leaves lots of pours (this is the right consistency)
5.If not,add some more water to ur dough
6.Make thin dosa n drizzle some oil all over it
7.It takes longer time to cook then usual dosa
8.Turn the dosa upside down
9.Remove and Serve with coconut and green chutney
10.Donot store this rava dosa dough..cos it turns tangy and soggy
11.Prepare rava dosa dough at smaller amount(as i have given), the rava gets dissolved when u rest the dough for long time


Variations
1.U can add chopped onions and coriander to the dough to make Onion Rava dosa
2.Can also subsitute maida with wheat or atta flour

Mango Icecream-







Ingredients
Mango Puree-1 cup
Fresh Curd-Half cup
Milk powder-Half cup
Condensed milk-Quarter cup
Roasted & powdered oats-2 tbsp
Sugar-2 tbsp(Can add more if u want)
Vanilla essence-Half Tsp
Choco chips to garnish

Method
1.Mix all the ingredients in blender and beat it for 2 minutes in high
2.Taste it and add sugar if it is less
3.Beat it for another one minute if u added sugar


I used the tart moulds to serve the icecreams



U can also use the ice trays


Ready to go freeeezyyyy

Spicy Veg Pulao

Spicy Vegetable Pulao
Ingredients
Jeera Rice-2 cups
Water-2cups+half cup
Any Mixed Chopped Vegetables-1 cup
Red chilli powder-1 tsp
Garam masala-1/2 tsp
Salt to taste
Cardamon-a few
Star anise-1
Green Chillies-2
Ghee-4 tbsp
Onion-1
Bay leaf-1
Tomato-1

Method
1.Take wide pan,add ghee-2 tbsp,fry bay leaf,Star anise,Cardamon
2.Chop Onions n Tomato and fry it
3.Add vegetables,Green Chillies(slitted),Salt,chili powder and garam masala
4.Add the water and allow it to boil
5.Add the washed rice and close with tight lid
6.Allow it to cook in medium flame
7.Once the rice is cooked,pour the remaining ghee and stir it
8.U can also garnish with coriander leaves

I used Carrot,Beans,Green Peas and Paneer.Cut Vegetables in equal size.So that it cooks evenly..




Sakthi Chicken Masala

Sakthi chicken Masala
Ingredients
Chicken-1 kg
Sakthi Chicken masala-1 packet
Onion(chopped)-2
Tomato(chopped)-3
Ginger garlic-2 tbsp
Oil -3 tbsp
Salt to taste
Method
1.Fry Onion n Tomato in oil
2.Add Ginger garlic paste(add paste after tomato will not be sticky on pan)
3.Add Chicken,Salt and one cup of water
4.Close the lid n cook until chicken is soft n tender
5.Add the Sakthi chicken masala
6.Stir fry until the gravy goes red n the oil oozes out
7.U can also make gravy by adding some water like i did here.

Moong dal kheer


Aadi matham(Aadi- Tamil month) is born,which is auspicious for goddess...All the festivals starts with this month.. People worship goddess in temples and offer food(Pongal,Kuzhl,kozhukattai) to others..Some People worship the goddess at home on any adi friday by making grand pooja at home,devoting bangles,saree,jewels,mehendi,sweets,savouries...etc., what all the goddess likes to have ,they denote it to ladies ....

Ingredients
Pasi Parupu-1 cup
Jaggery-3/4 cup
Coconut -3 tbsp
Cashew roasted in ghee-a few
Elaichi powder-pinch
Method
1.Cook moong dal well n smash it
2.Add jaggery,coconut,Elachi powder to it n boil well
and cook for 10 minutes.
3.Add roasted cashew in ghee for garnishing
